50 Things You Must Do This Summer, yet? #17 - Start a journal and actually write in it.
Well, isn't that what I'm trying to do here? I have really slacked off over the last couple of years and I regret it from the standpoint of not having it all written down. I enjoy going back and looking through old posts of experiences I've had with my "babies and husband" over the past five plus years. So here's to me getting my act together and getting things blogged. I have difficulty with very personal journaling. I don't think I'll ever do it. Writing anything I'm thinking, feeling, experiencing down on paper feels unsafe and risky to me, no matter how therapeutic people claim it to be. So much can be misinterpreted if the eyes of the unintended (as in, anyone but me) get an accidental or intentional glimpse at it. That said, I am largely transparent and open to others about most of my life, so not a lot is hidden. In a strange way, though, I do find blogging once a day to be a satisfying way to recap and process all the things that are going on in me and around me in this crazy thing we are experiencing called life. That said, I am a total sucker for a pretty little planner or a lovely little blank book. I might just have to go and see if I can find me one. Just in case I change my mind.

50 Things You Must Do This Summer, yet? #18 - Drink something that comes with an umbrella in it. Have another. I've got a date with a friend. And her name is Michelle. Maybe we'll have them in Florida. I hear it's summertime year round down there.

Grilled Peaches With Macaroons And Caramel Sauce
PREP TIME: 5 minutes
TOTAL TIME: 15 minutes
SERVINGS: 4
4 med peaches, halved and pits removed
4 coconut macaroons
¼ c jarred caramel topping
1. HEAT grill to medium and coat rack with cooking spray.
2. PLACE peaches cut side down on grill rack and grill until lightly browned and tender, about 10 minutes, turning once. Remove and arrange 2 halves on each of 4 dessert plates.
3. CRUMBLE macaroons into cavities and over tops.
4. SPOON caramel topping evenly over all.

I used Keeblers Coconut Delights (a spin off of Girl Scout Samoas) crumbled over the top instead and skipped the caramel topping. However, someone also mentioned serving with ice cream. Now why didn't I think of that? Next time!
