Eating Like Kings
#9 of #100gratefuldays: Thankful for summertime freshness and eating like kings. Tabbouleh! Over an hour for prep, but it's worth it.
Something tells me there's not going to be any leftovers. It goes good over the top of deliciously grilled hamburgers, too. I love summer eating!

Out to Lunch
We used to come here for lunch at least once a week before we had kids. If not twice. Now we're lucky if we make it once a year. My how life has changed, but I wouldn't have it any other way. Out to lunch with the family. "Life could not better be."

CSA and the Potato Onion Frittata
We have had an amazing experience with the CSA we joined this year. It's especially nice since this was the first year in the 13 years we lived here that I failed to get a garden planted. It's so much fun to get our bag of fresh goodies every Wednesday. Almost like Christmas. And in our bag of goodies, they usually include a recipe of what you can cook up with what they've included. One of our favorites so far has been the:
Potato Onion Frittata

3/4 pounds of baby potatoes
3 Tbsp. extra virgin olive oil
1 large onion, sliced thinly
Course salt (I use sea salt.) and freshly found pepper, to taste
1/2 cup white cheddar cheese, shredded (I used a KRAFT Mexican mix bag from the store.)
10 large eggs, whisked (I used 5 eggs and 6 egg whites.)
1/2 cup reduced fat sour cream (I used fat free.)
(I also added red peppers and a jalapeno pepper, chopped.)
Preheat oven to 400 degrees. Place potatoes in a small sauce pan and cover with water. Bring to boil. Reduce heat and simmer until tender when pierced, about 5 minutes. Drain and let cool. Cut into 1/4 thick slices. Chop up a red pepper and jalapeno pepper.
Heat oil in an oven-proof, 10" non-stick skillet over medium heat. Cook onions until just translucent, about 2 minutes. Add potatoes and peppers and cook until golden brown.
Whisk together cheese, eggs, salt and pepper. Reduce heat to medium. Pour egg mix in skillet. Dollop with sour cream and swirl into egg mix. Cook until edge is set. Carefully transfer to oven and bake until set - approximately 8-10 minutes.
Invert on plate. Serve warm. (We like to eat it with salsa. Yummy!)

Wildflower Surprise




If you know me at all, you realize that my garden and flowers languish in July. The weeds take over the garden and I rarely spend a moment in it at all. My potted flowers get brown and spindly with a few blooms here and there as I'm not real great about keeping them watered, either. I usually get a handful of cucumbers and loads of tomatoes to show for my efforts and that's about it.




This year, I decided to pull up the sod around the back of my garden and plant wildflower seeds instead of trying to figure out a way to mow the narrow strip back there. It was the best thing I've ever done. All summer long, when I've taken a moment to visit my garden I've found the best surprises. It was beautiful all summer long and I didn't have to do anything to it. Now THAT is my kind of gardening.
